When we bought our toaster oven 8 months ago (wow, let me just pause at the fact that Scott and I have really been in this country for 8 months – crazy), we noticed that it came with a rotisserie chicken feature! We were so excited about this but did not get the chance to try it out until about a month ago. Since then we have been trying different marinades and perfecting the art of the rotisserie chicken. Well, three times is truly the charm as Scott made a perfect rotisserie chicken the other day. He made a soy sauce/brown sugar/worcheshire sauce/red wine/onion/garlic marinade that made the whole house smell cozy and wonderful! Let’s just say that he was real proud of himself . . .

I made some creamy homemade mashed potatoes and a cucumber salad (sadly not as good as yours Aunt Diane Kauffman – I’ll have to get your recipe!!) and it was like a mini thanksgiving! Needless to say we will be having rotisserie style chicken more often!
